Tahini Pasta

Ingredients: 12 oz. Whole Wheat Pasta, 1 Cup Sliced Mushrooms, 1 Cup Greens (Spinach, Broccoli, Kale, etc), ΒΌ Cup Tahini, 1 Cup Chickpeas, 1 Tbsp Vegetable Bouillon, 2 tsp Onion Powder, 2 tsp garlic powder, 1-2 Tbsp Curry Powder
Garnish (Optional): Fresh Parsley, Glazed Balsamic Vinegar, Roasted Red Pepper, Seasame Seeds

Cook Time: 20-30 minutes

Preparation:

Cook pasta according to package, generally 9 to 11 minutes. Add chickpeas and sliced mushrooms to the boiling water at the same time as the pasta. With 2 minutes left, add greens. Once the pasta is finished, strain and save 1/4 cup of the hot water. Add bouillon to the 1/4 cup of water and mix until fully dissolved. Add bouillon, tahini, and spices to the pot, and mix until everything is blended. Garnish and enjoy!
